Ingredients (for muffins):
Refined flour: 2 cups
Sugar: 1 cup
Baking powder: 1.5 teaspoons
Baking soda: 0.5 teaspoons
Orange peel (finely grated): 2 teaspoons
Nutmeg powder: 1.5 teaspoons
Cinnamon powder: 1 teaspoons
chopped cranberries: 1 1/2 cups
eggs beaten: 2
orange juice: 3/4 cup
Powdered Sugar Glaze:
2 cups powdered sugar
2 tablespoons softened margarine or butter
1 teaspoon vanilla essence
3 to 4 tablespoons milk or half-and-half
How To make the muffins:
- Grease or spray 12 and 6-cup muffin tins
- In a large bowl, combine refined flour (maida), sugar, baking powder, baking soda, orange peel (grated), nutmeg powder, cinnamon powder and ginger powder.
- Add shortening and mix well (like chopping). Then add orange juice, vanilla essence, eggs, chopped cranberries and pecan nuts and mix lightly.
- Pour this mixture into the muffin cups. Bake them for 25 minutes or until lightly golden.
How to make Glaze:
1. Add powdered sugar, softened butter, vanilla essence and 3 tbsp milk in a bowl.
2. Beat them well until the syrup becomes smooth. If you want it thinner, add some more milk.
3. Drizzle this syrup over the prepared muffins using a spoon (sprinkle it slowly).
Some important things (tips):
- Use a scoop or tablespoon to divide the muffin batter evenly among the cups.
- If you like sweet muffins, you can increase the sugar in the recipe a little.
- When combining the wet and dry ingredients, mix just enough to incorporate. Over-mixing can make the muffins tough.
- Frozen cranberries can be used, but fresh cranberries taste best.
